A Family's Journey to Authenticity

When Eric and his wife decided to open Ko Japanese Dining, their mission was clear: to fill a void in Dupont Circle's dining scene by offering genuine Japanese cuisine crafted by authentic Japanese chefs. "We realized that while there were many Japanese restaurants in the area, few had Japanese chefs or truly authentic menu items," Eric explains. With his wife's deep-rooted connections to Japan's culinary world—her brother being an experienced restaurateur in Japan—they set out to bring time-honored recipes and dining customs to Washington, DC. "We wanted to provide a real Japanese dining experience, encompassing not just the food but also the etiquette and protocols," Eric emphasizes.

Signature Dishes That Define Ko Japanese Dining

At the heart of Ko Japanese Dining's menu is the Kaiseki course, a multi-tiered dining experience that artfully blends standardized dishes with the chef's seasonal selections. Comparable to Omakase, where the chef curates the meal, Kaiseki offers a structured yet flexible approach. Eric describes it as "a hybrid," featuring offerings like tempura, sashimi, sushi, and premium options that include Wagyu beef. This tasting menu provides diners with a comprehensive journey through Japanese flavors and techniques.​

Another standout is the karaage, Japanese-style fried chicken marinated for days to achieve a juicy interior and crispy exterior. "It's one of my favorite items on the menu," Eric shares. Additionally, the sushi sets, available in varying sizes, showcase the chef's selection of fresh fish, catering to both newcomers and seasoned sushi enthusiasts.

Commitment to Freshness and Quality

Ensuring the authenticity of each dish begins with sourcing the finest ingredients. Ko Japanese Dining imports fish directly from Japan through trusted suppliers who deliver multiple times a week. Locally, the restaurant partners with farms in Frederick, Maryland, to procure fresh produce, eggs, and unique herbs. "We get locally sourced stuff from there," Eric notes, highlighting their dedication to quality and community support. Additional specialty items are obtained from Asian markets, ensuring that every component of their dishes meets the highest standards.

Creating a Genuine Japanese Atmosphere

Beyond the menu, Ko Japanese Dining distinguishes itself through its people and ambiance. The staff comprises many Japanese nationals, bringing an authentic cultural touch to the dining experience. "We have a lot of Japanese staff, authentic Japanese staff," Eric states. As a family-owned and operated establishment, the presence of Eric, his wife, and their children is felt throughout, from managing operations to engaging with guests. This familial approach ensures that every visitor feels welcomed and immersed in a truly Japanese environment.​

Looking Ahead: A Legacy in the Making

As Ko Japanese Dining continues to thrive, thoughts naturally turn to the future. While expansion isn't an immediate focus, the family envisions passing the torch to the next generation. "For us, it's a legacy thing. We want to have something to give to our kids," Eric reflects. Discussions have included ideas like a café or market spin-off, but for now, the emphasis remains on perfecting their current offerings and solidifying their place in the community.
